Special Sunday Morning Breakfast

We had a very productive weekend at home-  accomplished several things that had been "on the list."  I don't know about you, but when I start getting things done, it gives me new energy to go on and do other things...like fixing a really special breakfast the next morning. My family loves it when I'm feeling energetic!

I fixed banana pancakes, which have always been a family favorite.  I still think of my good friend Bonnie Powers whenever I make them, as she is the one who shared the recipe with me waaay back in 1985.  Here is a tempting look at a tasty stack, dripping with melted butter!

You will need really ripe bananas for this one, sort of like what you would use for banana nut bread...I start with a BIG bowl, and using a potato masher, I mash the bananas...


...and then, just a couple of minutes later, I'm ready to start cooking!  It's a really fast meal to prepare...So, I start the griddle to preheat it before I do anything else. 


I set up the bowl of batter on the stove top, right next to the griddle.  I place a flat cookie sheet underneath the bowl to catch any drips. (I have a griddle built into my stove top, and it gets used a lot!  If you're ever in the market for a new stove, I would highly recommend the FiveStar dual fuel range with electric convection oven...I LOVE mine!)


And, then, using a soup ladle, I spoon the batter onto the hot griddle.  


...then wait for bubbles...


When you see bubbles, they are ready to flip.


Then, after a minute or so, they are ready to plate and take to the table!


I have already taken the nice thick strips of smoky bacon out of the oven...


Who doesn't LOVE bacon?


Add a little powdered sugar on top of the pancakes, drizzle with some lemon juice, and that's a taste of heaven right there on your plate!


The recipe:

  • 1 banana- very ripe
  • 1 egg
  • 1 cup plain flour
  • 1 teaspoon baking powder
  • 1 pinch of salt
  • 1 cup milk (any kind works)
  • powdered sugar
  • lemon juice
Just follow the instructions, adding ingredients in the order listed, as outlined above in the pics. Mix just until everything is moist...Reserve the powdered sugar and lemon juice for toppings.

This is the recipe for one person.  If you use two bananas, just use two of everything else; for three people, use three of everything, and so on.  It's so easy...I usually make enough for three, so the pics that you saw earlier in the post were using three of everything.  If you have leftovers, they refrigerate and heat up in the microwave well.

Note:  I have tried to substitute self-rising flour, and it's just not the same...Could be my imagination, but I like it better like this, using plain flour and following the recipe.
